Very Simple Roasted Carrots Recipe
Simple Oven-Roasted Carrots
Ingredients
- 12 raw carrots
- 3 Tbsp olive oil
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 400 degrees F. Clean carrots well. Cut the carrots in half if they are large, and then into roughly three inch chunks.
- Put the chunked carrots in a large bowl. Add the remaining ingredients, and coat the carrots thoroughly. Spread the seasoned carrots evenly on a baking sheet.
- Roast for about 20 minutes or until tender.

Curry Chicken Salad with Fruit
Curry Chicken Salad with Fruit
Ingredients
- 4 skinless, boneless chicken breast halves - cooked and diced
- 1 stalk celery, chopped
- 1/2 onion, chopped
- 1 small apple - peeled, cored and chopped
- 1/3 cup golden raisins
- 1/3 cup seedless green grapes, halved
- 1/2 cup chopped toasted pecans
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon curry powder
Instructions
- In a large bowl combine the celery, onion, chicken, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise.
- Mix all together, and toss to coat evenly.
- Serve and enjoy!

Banana Bread Recipe
Banana Bread
Ingredients
- 1/2 C (one stick) No Salt Added butter
- 1 C sugar
- 2 eggs, beaten
- 4 bananas, mashed
- 1 1/2 C flour
- 1/2 t baking soda
- 1/2 t vanilla extract
Instructions
- Preheat oven to 350° F
- With electric mixer, cream butter and sugar until smooth.
- Add vanilla, eggs and bananas. Mix well but don't overdo it or the bread will be too dense
- In medium-sized mixing bowl, combine flour and soda. Add to banana mixture.
- Pour into greased and floured loaf pan.
- Bake one hour
